“PMP” - Poor Man’s Pizza - A Cornell Campus Late Night Favorite! Ingredients: • 6 6” hoagie rolls • 2 cups marinara sauce, homemade or store bought • 3 cups mozzarella cheese, shredded • 1 cup parmigiano reggiano, grated • 1 cup garlic butter, recipe to follow • salt and pepper, to taste • red pepper flakes, optional Garlic butter: Combine 2 sticks of softened butter with half a head of peeled and roasted garlic and place in a food processor, and process until smooth. Directions: • Preheat the oven to 350F degrees. • Split the hoagie rolls in half lengthwise, but do not cut all the way through. Butter each half with the garlic butter and place on a baking sheet. Toast until lightly browned. • Once slightly cooled, evenly distribute the marinara sauce and cheeses between the 6 rolls. Season with salt and pepper, and red pepper flakes (if preferred). Return to the oven until the cheese melts, about 5 minutes. • The PMP is The Cornell Club’s base for all of its hot truck sandwiches! Feel free to customize your “Hot Truck” any way you like. Some of The Club’s favorite toppings include breaded chicken cutlets, hot and sweet italian sausage, meatballs and sautéd mushrooms. Guinness Braised Beef Short Ribs Directions: • Preheat the oven to 350F degrees. • Heat the oil in a braising pan. 3” deep or more but not in a stockpot. • Season the ribs with salt and pepper and coat in the flour mixture. • Brown ribs very well on all sides and set aside. • While the braising pan is still hot add the garlic and cook until fragrant. Add the remaining vegetables and cook until well browned. Add the tomato paste and cook for an additional 3 minutes, scraping in all the corners of the pan to prevent burning. • Add the stout, beef broth, bay leaves and herbs and bring to a simmer. • Return the short ribs to the braising pan and season with salt and pepper. Cover the ribs and braise for 2 ½ to 3 hours or until tender. You will be able to pull the bone out with ease. • Remove the ribs and set aside. Strain the gravy and adjust the seasoning to your liking. • Serve with mashed potatoes and plenty of the gravy. Ingredients: • 2 pounds bone-in beef short ribs, cut into 4oz pieces • 2 bottles Guinness Draught Stout • 1/3 cup carrots, celery and onion, roughly chopped • 3 cloves mashed garlic • 2 each sprigs fresh thyme • 3 tablespoons tomato paste • 2 cups beef broth, homemade or purchased • salt and pepper, to taste • 3 bay leaf • 1 teaspoon dried oregano • 1 cup all purpose flour seasoned with salt, ground white pepper and granulated garlic • 4 tablespoons extra virgin olive oil Cornell Class Reunion Alert! The stout gives off a nice caramel taste but substituting the beer for more beef broth is okay, too!
